Classic white vinification for this vintage, destemmed bunch pressing using only the free-run must with fermentation in large 30hl Slavonian wood and a 20 hl French oak round. Yeasts in suspension until the month before bottling (around September), then a sweet rest in the bottle for about a year and a half.
