“To understand life deeply, we must leave matter behind and focus on understanding the system that gives life to the Earth”. These few words are enough to understand the richness that lies in the winemaking philosophy of Nicolas Joly, owner of the Domaine. Coulée de Serrant takes its name from a vineyard planted by Cistercian monks around the year 1130 and has remained a vineyard ever since. The vineyards are located in the western part of the Loire, where La Coulée de Serrant became an appellation in its own right; today there are 7 hectares owned by the Joly family, which are cultivated partly by hand and on horseback, due to the steepness of the slopes overlooking the Loire. A master and pioneer of biodynamics, Nicolas has been applying the principles of this philosophy since 1981, which aim to catalyze the “vital energies” in winemaking. In addition to biodynamic preparations, throughout the winter Nicolas lets sheep graze to clean the soil, while from spring onwards he applies various “soothing” herbal teas for the soil: from thyme to garlic, everything possible is done to protect from frost and strengthen the vine. Everything is harvested manually in 4 or 5 passes, cutting only the bunches at perfect ripeness. The resulting wines are golden yellow, with aromas of candied fruit, apricot and honey, expressing great minerality and creaminess. All the labels are obtained from 100% pure Chenin, distinguishing themselves on three lines: the Coulée de Serrant - classified as one of the best French whites - the Vieux Clos and the Clos de la Bergerie. Nicolas' sensitivity and immense respect for all-round and sustainable viticulture lead him to create appellations and have followers throughout Europe; in 2008, in fact, with five other producers, they founded the association “Renaissance des Appellations”.
