We are in Saint-Aubin, in Côte de Beaune, a village where in 2002 Pierre Fenals founded his own Domaine after decades spent in the fashion industry in Paris, driven exclusively by a deep passion for the world of wine. The French expression “belles lies”, literally “beautiful lees”, refers to a practice widespread in the 17th century among the monks of Burgundy which consisted of rubbing the barrels with the lees of the previous year. Following the dictates of certified organic agriculture and biodynamics, in the just 3 hectares of vineyards owned by Pierre Fenals of Maison en Belles Lies grows the traditional Burgundian vines Pinot Noir, Gamay, Chardonnay and Aligoté. The soils on which the vines grow are mainly made up of clay and limestone, with the presence of gravel in some vineyards. The altitudes reach up to 320 meters above sea level and in the cellar Pierre Fenals follows a minimalist winemaking philosophy, with the Pinot Noir bunches vinified whole and the fermentations always entrusted to indigenous yeasts. Stainless steel tanks and small French oak barrels of several passages are used as wine containers and the whites mature for long periods on the fine lees, without batonnage. Throughout the entire production process, the use of clarification and filtration operations is excluded as well as the addition of sulfur dioxide, in full respect of the expression of the terroir. The limited production of the Burgundy winery Maison en Belles Lies consists of white and red wines of praiseworthy class and purity, characterized by a refined mineral tone. The grapes destined for the Pierre Fenals labels come from the territories of Beaujolais and the Côte de Beaune, specifically from villages such as Aloxe Corton and Maranges, but also Santenay, Corton and Monthelie.
