BUBBLES AND PASSION WITHOUT EVER FORGETTING ELEGANCE
Christophe comes from a family of winemakers, in 1995 he decided to start producing his own Champagne and immediately certified himself organically, which was not fashionable at the time. The village of Mont Bonneil is a hamlet overlooking the Vallée de la Marne, located a few kilometers from the town of Chateau-Thierry, south of the Aisne department. The vineyards extend for 4.5 hectares on a difference in altitude of 100 meters: the lower part is made up of sandy soil composed of alluvial silt, the central part is a calcareous soil with a sandy substrate, while the top has a greater presence of clay and a calcareous soil. The variety of soils gives greater complexity and harmony and the varieties planted are 75% Pinot Meunier, 15% Pinot Noir and 10% Chardonnay, with a planting density of 8,000 vines per hectare. The musts are decanted by pressure, without the use of pumps; they ferment spontaneously in steel and are never sugared. All wines undergo malolactic fermentation naturally, as they are neither filtered nor cooled.
