Ugo Lestelle, in love with the South of France, after years of exploration found his spiritual home in Saint-Chinian, in the heart of Languedoc. It is here that he was fascinated by soils rich in clay and limestone, with a high presence of silicon, which inspired him to bring his project to life in 2015. From the beginning, he chose an unconventional approach: light vinification, whole-bunch carbonic macerations and short aging in wood. The goal was clear: to enhance the minerality of the terroir, creating elegant, fresh wines, rich in fruit and never overextracted. The common thread is transparency, pursued through natural practices both in the vineyard and in the cellar. The vineyards, located at around 550 meters above sea level, benefit from a climate that favors slow ripening and an extraordinary aromatic expression.
