Davide Spillare began working the two hectares of family vineyards in 2007 at just 20 years old. Planted with Garganega, Trebbiano and Merlot with an age from 10 to 80 years, on the volcanic soils of Gambellara in the province of Vicenza. He grows and learns thanks to the teachings of Angiolino Maule, who contributed with identity and character to trace a new natural interpretation of an often underestimated grape: Garganega. Non-interventionist approach, he does not use technology in the cellar, not even using sulfur dioxide at the time of bottling. In the vineyard he reinterprets the principles of Steinerian biodynamics with an eye to the present, attentive to the needs of the land and the characteristics of the season, and to a very different era from that in which the theories of biodynamics were promoted.
