Domaine Augustin
Domine Augustin is a small family business run by Marc and Emmanuelle Augustin, with 9 hectares of Premier Cru vineyards divided between Avenay Val d’Or, in the Montagne de Reims (an area suited for Pinot Noir), and Vertus, in the Côte des Blancs, famous for its Chardonnays.
Since the 1970s, Marc's father, Jean Augustin, chose to cultivate without chemicals, also refusing the use of urban waste-based fertilizers, which were very common in Champagne at the time. In 2011, the company embraced biodynamics, transforming it into a true philosophy of life. Since 2012, it has been Demeter certified.
In the cellar, no steel is used: only wood, concrete, and amphorae. Fermentations are spontaneous, no oenological additives are used, and the addition of sulfur dioxide is reduced to a minimum (absent in some cuvées). For secondary fermentation, dynamized fine lees and biodynamic raw sugar are used.
All Champagnes are vintage, Brut Nature (less than 3 g/l of sugar) and age at least 3 years on the lees.
