Domine Augustin is a family business, run by Marc and Emmanuelle Augustin, which has 9 hectares of vineyards in Premier Cru in the municipalities of Avenay Val D'Or on the Montagne de Reims, home of Pinot Noir, and Vertus in the famous Cote des Blancs, famous for its Chardonnay. The company has always been organic by will of Marc's father, Jean Augustin, who rejected chemicals from the beginning as well as the practice of using solid urban waste as fertilizers (sadly and widely adopted in Champagne in the late 70s), converted to biodynamics in 2011. Adhesion is complete and biodynamics in the company is not only a cultivation method of respect for living things, but becomes the family philosophy of life in search of maximum harmony with nature. In the cellar, steel is not used and there is space only for wood, cement and amphorae of different origins and shapes. The interventions are limited to the essential and in strict accordance with the lunar calendar, every oenological additive is excluded and the use of sulfur is minimal and absent on some cuvées. All fermentations are spontaneous and for the refermentation in the bottle the fine lees are used, stored in demijohns appropriately dynamized together with raw sugar from biodynamic agriculture (Demeter certified). The base wines are refined for a long time (always at least until the summer solstice) before bottling for the second fermentation and the Champagnes rest at least 3 years on the yeasts before disgorging: they are all vintage and Brut Nature, therefore not dosed and with residual sugars lower than 3 g/l. Demeter certified since 2012, the 4 main cuvées bear the names of the constituent elements of the cosmos: Earth (Blanc de Noirs young vines), Fire (Blanc de Noirs old vines), Air (Pinot Noir-Chardonnay) and Water (O2 Rosée, Rosé de saignée from a single vineyard) and express purity and lightness combined with the complexity of the drink and the structure of the wine. These are joined by the two obtained without sulfur (Cuvée 116 Blanc de Noirs and Cuvée 116 Chardonnay) and the Cuvée Coeur Saphyr from a very small 100% Pinot Meunier parcel.
