Cherubs

Amidst the Brescia hills, on the eastern edge of Franciacorta and within a natural park, the Azienda Agricola Cherubini was founded, passionately led by Mattia Corbellini. Here, production is exclusively dedicated to the Metodo Classico, with artisanal sparkling wines that express authenticity, rigor, and a deep connection to the territory.

The main grape varieties are Pinot Noir and Chardonnay, grown on clay soils rich in limestone rocks and nourished by underground water. The cool microclimate, characterized by significant temperature fluctuations, yields perfect grapes for sparkling wine production, capable of combining minerality, tension, and aromatic finesse.

Mattia Corbellini's philosophy is based on a sustainable and minimalist approach: no pesticides or chemical herbicides in the vineyard, spontaneous fermentations with indigenous yeasts in concrete tanks, without any fining or filtration. All sparkling wine operations are performed manually, from the secondary fermentation to disgorgement, with aging on lees ranging from 24 to 60 months.

The Cherubini range stands out for its radical choice of Dosaggio Zero, pure and essential sparkling wines that enhance the freshness and minerality of the territory without compromise. Bottles produced in limited quantities, yet capable of embodying a unique and unmistakable soul: that of a winemaker who has made artisanal purity his signature.
