Harvested from vines planted in the 1960s and 1980s. Spontaneous fermentation in concrete barrels with skin contact for 9/15 days depending on the vintage.
For the refinement, it is moved to stainless steel and some barriques for 12 months.
No clarification or chemical additions. Little sulfur added, used on the grapes and just before bottling.
