It was conceived as a colfondo, during fermentation they realized that there was a great balance, for this reason they took a step back and bottled it without bubbles. The will is to let the grapes and the territory express themselves, and sometimes courage is taking a step back and changing your mind. The wine fermented spontaneously, it was not filtered and only a minimal amount of sulfur was added at bottling. Bottled, as per tradition, in a Rhine bottle, this wine represents the white of the past, light and easy to drink, for those who, like us, suffer from thirst. Hence the name "Questo non è", a wine banned for its great desire for freedom.
