Cautiero is located in the hinterland of Campania, in Frasso Telesino, on the north-west side of Mount Taburno, within the Sannio DOC. Here, viticulture takes place among olive trees, pastures, cherry trees and woods. Here, earth, air, water and plants live in perfect balance. In 2002, Fulvio and Imma began cultivating the land using organic methods (copper, sulphur, microbiological control and green manure with minimal soil cultivation). In 2010, the first wines they had in mind finally saw the light of day in the cellar. Improving on their grandfather's technique, they began to produce a wine capable of expressing the vintage and the territory of origin. With the favourable microclimate, clay soils and low yields, important and structured wines with a marked typicality are obtained. Fermentation is spontaneous for all wines and the use of sulphur is limited to the bare minimum. In the 4 hectares of company vineyards, the grapes grown are typical Campania grapes: Fiano, Falanghina, Greco, Piedirosso and Aglianico.
