Vinificazione
Le uve raccolte vengono pigiate e poste a fermentare in vasca dove rimangono fino alla metà di maggio, con un paio di travasi per eliminare la torbidezza eccessiva. In primavera l'aumento della temperatura da ai lieviti naturali l'avvio della rifermentazione. Alla vista delle prime bollicine il vino viene imbottigliato e accatastato fino a novembre.
Profumo
Sentori profondi ed eleganti di frutta matura e crosta di pane con un finale piacevolmente ammandorlato.
Gusto
Fresco e rotondo, colpisce per la sua eleganza ed incisività sul palato.

Si abbina perfettamente al pesce sia cotto che crudo e a tutti i tipi di insaccati.

Faithful to our family tradition, we have chosen to produce 1.11, a line of wines “col fondo”, in French “sur lie” or “on the yeasts”. With this method, our grandparents and great-grandparents produced sparkling wine before the introduction of autoclaves, the pressure tanks. This wine preserves the natural deposit of yeasts in the bottle, appearing slightly cloudy, with fine and delicate bubbles. On the nose, a hint of bread crust is added to the characteristic notes of apple and pear of Prosecco, while on the palate it reveals itself to be full-bodied, bold and persistent, perfect to enjoy with fish or sopressa.
