Diraspatura, fermentazione e macerazione sulle bucce per 10 giorni in tino aperto e maturazione in barrique per un anno. Affina per un anno in bottiglia.
Profumo
Afflato alcolico, portata ampia, tra la camomilla e la buccia di limone, sensazioni di zagara. Bella spinta d’intonazione marina.
Gusto
Carezzevole, maturo, si avverte un senso di “allagamento” in bocca grazie al movimento lieve, cadenzato. Si distende grazie alla sapidità, progredisce e lascia una sensazione densa, pacifica.
Abbinamento ideale
La raffinata cremosità del Vecchie Vigne viene elevata da un risotto mantecato con formaggio erborinato di spessore con fichi freschi e lavanda.
