The refined production of Domaine Bornard stands out for its authenticity and class, a reflection of the artisanal winemaking philosophy of its creator who works within the municipality of Pupillin, in the Jura wine region. Tony is the son of the famous vigneron Philippe Bornard, from whom he inherited the estate in 2017, merging it with the one he had founded independently in 2013. The cellar, located in the oldest building in Pupillin, is the place where Tony experiments, shaping pure and sincere wines, respectful of the varietal and territorial characteristics. Before embarking on his own winemaking journey, Tony gained work experience on a large Australian estate where, by his own admission, he learned to apply everything he doesn't want to do to his wines, such as highly invasive winemaking techniques and practices. Tony Bornard's estate has just over 11 hectares of vineyards managed according to the dictates of organic and biodynamic agriculture. The vineyard area, planted on soils composed of schist and blue, gray and red marl, is intended for the native vines Poulsard, called Ploussard in Pupullin, Trousseau and Savagnin, in addition to those of Burgundian origin Pinot Noir and Chardonnay, varieties that in the Jura territory have found an ideal habitat giving rise to expressions of absolute value. As proof of this, in this wine-growing region Chardonnay has given rise to the Melon à Queue Rouge vine by genetic mutation. The name “rouge” of this grape does not refer to the color of the grapes, which are yellow, but rather to the peculiar shade of the trunk. All fermentations occur completely spontaneously and the processing of the masses takes place with total respect for the raw material, excluding the use of additives and oenological adjuvants, including sulfur dioxide. Ageing takes place almost exclusively in oak barrels, with some wines maturing instead in fiberglass tanks. The bottles created by Tony Bornard include white and red wines that combine concentration and a lively freshness. All the labels feature a stylized fox.
