Vinificazione
Diraspapigiatura parziale, fermentazione spontanea in tini tronconici e botti grandi di rovere con bucce e raspi per 5 settimane, di cui 3 a cappello sommerso. Affinamento per 10 mesi negli stessi contenitori, per 12 in vasche di cemento e per 9 mesi in bottiglia.
Profumo
Naso pronunciato su note di frutta rossa matura (ciliegia, prugna rossa) e frutta scura (amarena e prugna), con rimandi di liquirizia e spezie scure.
Gusto
Bocca calda, concentrata, con la vena acida che spinge la bevibilità all'infinito e la linea aromatica e struttura che ne fanno sentire la presenza in bocca senza interruzione. Una vera potenza in espressività, lunghezza e spessore.
Abbinamento ideale
Un rosso di grande personalità, che merita gli accostamenti culinari più decisi. Da sperimentare con delle costolette di maiale grigliate in salsa barbecue.

Campill di Pranzegg is a fresh, vinous and very elegant red wine. As Martin, the winemaker who produces it, defines it, his is a “liberated slave”, a subtle, fine and frank wine that gives taste and full dignity to a grape variety that has been violated and mistreated by the Alto Adige territory. When you find yourself with some dry bread in the kitchen, it's time to try your hand at making dumplings. With speck, spinach or beetroot, mushrooms or cheese, dumplings are always delicious, even just topped with a little melted butter and chives.
