“All'Antica” Nerello Mascalese Vini Scirto is made from ungrafted vines between 80 and 100 years old on land composed of a plurality of lava flows stratified over the course of history and time. Using ancient methods, Nerello Mascalese is harvested exclusively by hand, avoiding any type of mechanization in the vineyard. “All'antica” (ancient), its name derives from the fact that it is made in the same way as wine was once made. Once taken to the cellar, the bunches are placed inside steel tanks where they wait for the indigenous yeasts to start the alcoholic fermentation followed by a maceration on the skins for 36 hours. The process ends with a 12-month refinement in steel.
