Vinificazione
la Malvasia di Candia Aromatica viene svinata il giorno di San Martino dopo circa 2 mesi e mezzo di macerazione e fermentazione in qvevri georgiano per poi essere blendata con il Pignoletto che fermentata spontaneamente con i suoi lieviti indigeni in acciaio e cemento senza chiarifiche o filtrazioni. Dopo l'imbottigliamento in primavera, inizia la rifermentazione spontanea.
Profumo
Naso ampio e articolato che apre su note di frutta candita e miele d’acacia seguite da sensazioni tostate ed eteree.
Gusto
In bocca è animato da una viva freschezza, corposo e lungo, finemente tannico sul finale.
Abbinamento ideale
Un vino atipico, che può esaltare le ricette della cucina orientale e le carni bianche delicatamente speziate.

The inimitable M&M'S by Orsi Vigneto San Vito is an atypical sparkling wine, produced from a base wine obtained using two native varieties macerated and fermented in Georgian amphorae. The second fermentation in the bottle is not followed by any disgorging, consequently the wine remains in contact with its own yeasts, which safeguard its longevity while increasing aromas and structure. The wine can be served without shaking the bottle, decanted if you want to separate it from its yeasts present on the bottom, or shaken lightly before uncorking to appreciate all its particular nuances.
