Don Pippinu Bianco is obtained from Carricante, Catarratto, Minnella and Grecanico grapes grown at 650 m on untreated soil. The vines are 80 to 100 years old with ungrafted roots. Manual harvest and soft pressing, spontaneously fermented without temperature controls and chemical additions, then continues the refinement in steel for at least 10 months. Vigorous example of Etna, intense yellow and minerality present more in the taste than in the nose, flavor and fruit are the masters. This wine is described by the writer Mario Soldati in his publication “Vino al Vino”, referring to Etna Bianco: “… thus Etna Bianco collects and blends, in its paleness and its aroma, in its freshness and in its hidden vein of smoke, the perennial snows of the summit and the fire of the volcano”.
