Pure Pinot Noir from vineyards located in Saint Bris where Athenais runs its business, on a hill between 210 and 250 meters. The soils here are clayey-calcareous and give round and mineral aromas. Fermentation as always spontaneous in whole bunches to preserve the fruit; after racking it is placed in Burgundy wooden barrels for 12/18 months. On the nose it is floral with notes of violet, a herbaceous freshness leads us back to dill, but also strawberry, cherry, a good body supported by sweet tannins and the right mineral acidity complete the picture.
