Refermented in the bottle on the yeasts, from Glera, Verdiso, Bianchetta grapes and an ancient variety of grape that the old people called Prosecco Malvasia for its aromatic nature, all vines aged between 20 and 70 years. The soil is sparse, of sedimentary limestone origin and the vines climb steep slopes. The average yields in this vineyard rarely reach 40 quintals per hectare. The second fermentation is done with its own must; the vinification is done by direct pressing, refined in steel tanks but with a part of refinement in large acacia barrels. Fresh, with intriguing floral and herbaceous notes of wild thyme and mint. Salty, harmonious, notes of ripe citrus return on the palate and the freshness of a high-hill Glera. Very fine bubbles that leave more space for the wine that enjoys great drinkability.
