Vinificazione
Dopo la raccolta nella prima meta’ di Settembre l’uva viene pigiata e fatta fermentare con le bucce per 15 giorni circa, poi viene svinato e posto 24 mesi in botte di rovere da 15 hl.

The So San , a pure Tocai Rosso (Grenache) from the Colli Berici area (25 km south, in the town of Sossano), therefore with a very different soil from the others of the company; decidedly calcareous and clayey with white rocks of marine sedimentary origin. After the harvest in the first half of September, the grapes are pressed and fermented with the skins for about 15 days, then they are drawn off and placed for 24 months in 15 hl oak barrels.
