Vinificazione
La fermentazione alcolica ha luogo in tini di rovere da 25 ettolitri, ad opera dei soli lieviti indigeni, con la macerazione sulle bucce protratta per circa 3 settimane. In maniera spontanea si svolge anche la fermentazione malo-lattica e sempre in botti di legno usate ha luogo l’affinamento sulle fecce fini, che prosegue per 21 mesi.
Profumo
Al naso macchia mediterranea, di arbusti assolati e bacche selvatiche, attraversati da sfumature più scure di radice e avvolti da una potente sensazione marina e iodata.
Gusto
Al palato è pieno e vitale, dalla dinamica decisa e di gran classe: al palato la struttura è decisa, con richiami speziati e un tannino maturo, persistente sulle note saline.

The Rosso...se from Tenuta Selvadolce is a wine obtained from pure Rossese grapes. After manual harvesting, the grapes are placed in crates and sent to the cellar. There, the alcoholic and malolactic fermentations will occur spontaneously, to conclude with aging on fine lees in wood for 10 months. Further aging in the bottle for another 12 months allows for a more balanced final result.
