Vinificazione
Fermentazione spontanea e macerazione sulle bucce per 20 giorni in tini troncoconici di rovere con frequenti rimontaggi. A seguito della fermentazione malolattica, affinamento in botti grandi di rovere per 36 mesi, in cemento per 8 mesi ed infine in bottiglia per altri 12 mesi.
Profumo
Al naso è pulsante e di straordinaria complessità fatto di fragole in confettura, viola appassita, incenso, spezie ed una lieve tostatura.
Gusto
Al sorso il vino è riempitivo e potente, perfettamente levigato e bilanciato tra una polpa, freschezza e vena salina. Un’esperienza.
