La vendemmia è tardiva, e i grappoli vengono raccolti quando sono già attaccati dalla muffa nobile. Fermentazione spontanea in demi-muids (600 l) con controllo della temperatura. Affinamento in contenitori di acciaio dopo diversi travasi e una filtrazione dolce.
Profumo
l ventaglio di profumi al naso è decisamente aromatico e diretto, con note di frutta matura ben amalgamate a sentori più minerali.
Gusto
In bocca è rotondo, scorrevole e vellutato, caratterizzato da un retrogusto persistente.
