Prosecco DOCG, obtained from the white winemaking of Glera grapes, is born from a gentle pressing of the grapes to obtain the 'flower', the best part of the must, followed by the cleaning of the must through 'decantation'. Left to ferment for about 15 days, after careful racking, it maintains elegant aromas and organoleptic balance. Winter is precious for filtration and making the wine clear, preserving the microbiological characteristics, yeasts, and good bacteria intact.
The wine stabilizes and, in the following spring, bottling will allow the naturally present yeasts to activate natural and spontaneous refermentation in the bottle, giving the wine the best harmony, a lower acidity, and ensuring an easy drink.
