La raccolta delle uve si effettua a piena maturazione, con successiva pressatura e fermentazione spontanea in vasche di cemento contemporaneamente alla macerazione sulle bucce. Senza filtrazioni o chiarificazioni, né stabilizzazioni si passa all’affinamento per un periodo di 18 mesi in demi-muid di rovere vecchi di alcuni anni, e concludendo poi con un riposo in vasca d’acciaio.
Profumo
Naso fruttato di matrice scura emerge immediatamente al naso, con frutti di bosco e prugna in evidenza, e ancora uva di Corinto; poi il naso si espande sui sentori affumicati e speziati, coronati da note animali di cuoio.
Gusto
Al palato offre la tipica densità e carnosità del varietale, attraversate da una decisa freschezza: il sorso è denso e strutturato, ma rinvigorito da una luminosa verticalità salina.
