Domaine Le Temps des Cerises
Domaine Le Temps des Cerises is a Languedoc winery with a spontaneous and sincere style, led by German artisanal winemaker Alex Prüfer. Having arrived in southern France as a young man, Alex harvested his first vintage in 2003, influenced by great artisanal producers such as Yan Rohel and Jean-François Nicq. The expression “le temps de cerises”, the name of the Domaine, translates to “the time of cherries” and comes from the 19th century song of the same name associated with the revolutionary movement of the Paris Commune. Alex Prüfer of Le Temps des Cerises cultivates just over 8 hectares of entirely certified organic vineyards, located on the highest hills of the Le Mas Blanc area in an environment as suited as it is difficult and inhospitable. The vines, some of which are very old, are rooted in schist and granite soils surrounded by woods, in a true context of biodiversity. Here, the varieties grown include the red grapes Grenache Noir, Carignan, Cinsault, Syrah, Aramon and Merlot, as well as the white grape varieties Chardonnay, Muscat, Macabeu and Roussanne. Dynamic, lively and pure wines, produced in very limited quantities. The reds, the real pride of the Domaine, are characterized by appetizing freshness and juiciness, while the whites and orange wines highlight a complex mineral vein.
