Domaine founded in 2001 in Estagel, in the heart of Roussillon, by Emmanuelle Vinci (biologist) and Olivier Varichon (oenologist). The vines are very old, some centuries old, and the project is simple from the beginning: total respect for the vineyard and the surrounding territory, grapes harvested by hand in the coolest hours and gently pressed with the feet. As Olivier says, in the cellar the only ingredient must be the grapes and for this reason no sulfur is used and no filtration is done. The vinifications are parcelled out to give life to deep wines with a magnetic drinkability.
