The Gerbais house is located in Celles-sur-Ource, a commune in the Côte des Bars which is located in the southern part of the French region of Champagne.
Winemakers in their third generation, the winery is now managed by Pascal Gerbais, who introduced the natural and organic management of the vineyards at the end of the last century, starting it in 1996 to be precise, and is currently assisted in the management of the company by Aurélien Gerbais, who recently joined the company in the name of an uninterrupted continuity that is becoming secular.
Founded by Ulysse Gerbais, who after surviving both World Wars chose to dedicate his entire life to viticulture and Champagne, the house experienced significant development under the management of Pierre Gerbais, Ulysse's nephew.
Since 1996, Maison Pierre Gerbais has been committed to a sustainable viticulture project, with the belief that a great wine can only be born from good grapes. For this reason, we intervene as little as possible during the winemaking phase and the use of sulphites is reduced to a minimum. This production approach was inaugurated by Pascal Gerbais, with the intention of maximizing the value of the family vineyard heritage of 14 hectares, populated by vines over 30 years old, and all the peculiarities of the terroir. Pinot Noir, Chardonnay and Pinot Blanc Vrai (a particular clone of Pinot Blanc) are grown here on clayey and calcareous soil which, given its geographical position, has many affinities with the terroir of Burgundy, in particular that of nearby Chablis.
