In the Mamaor area, on the hills of Valeggio sul Mincio, just over 10 km south-east of Lake Garda, the area of choice for Custoza and Bardolino, stands the historic Monte dei Roari winery. In 2007 it was taken over by Stefano, the founder's grandson, and his wife Alessia. After several years of working experience in large companies in the food industry, it was precisely their background and awareness of the quantities and types of products other than grapes allowed in winemaking that made them immediately choose the path of organic conversion in the vineyard (biodynamic since 2011) and work in the cellar without tricks. The company has 10 hectares divided into small plots on morainic deposits and clayey-calcareous soils, where the white varieties prevail (garganega, trebbiano, fernanda, trebbianello and sauvignonasse), and the ferrous ones, where the red grape varieties prevail (corvina, rondinella, merlot and rossanella, called molinara in Valpolicella). In the cellar there are steel and cement tanks and some terracotta amphorae; no filtration or clarification is allowed and the doses of sulphur dioxide (where added) are very low. All this contributes to producing wines that are very drinkable, both still and refermented, fresh, frank, tasty and thirst-quenching. Among the company's distinctive products we can mention the Bardolino Chiaretto DOC and the Custoza DOC, both characterised by a simple freshness.
