A recent and exciting joint project by Benoit Doussot (a very young Burgundian talent) and Bertrand Gautherot (founder and owner of Vouette et Sorbeé). The basis of this path is the valorization of the traditionally neglected, colder and hidden west-facing plots in Côte de Bar. While all producers are looking for vineyards in the south, east and south-east where ripening is faster, Bertrand and Benoit are deeply convinced that the fruit tension and complexity are obtained with slower and longer ripening. In addition to their brilliant technical vision, the two have created a virtuous circle by involving the winemakers around Buxières in a more careful vineyard management, significantly raising the bar of quality requirements (low yields, vine age > 20 years, organic certification) and guaranteeing in exchange a long-term agreement to purchase the grapes at much more satisfactory prices. Indigenous yeasts, fermentation and refinement in 350 and 600 litre barrels, no clarification, no dosage.
