Uva Grigia Verona IGT 2021 Tenuta la Cà
Uva Grigia is the name that Tenuta La Cà has chosen for its Pinot Grigio, and the name itself tells a precise story: not the international grape variety, not the large-scale industrial variety that has colonised the plains of the Northeast, but the "grey grape" in its most authentic identity, grown on calcareous morainic hills with very low yields, 40-50 quintals per hectare, and treated with rare patience. The detail that distinguishes this wine from any other interpretation of Pinot Grigio is just one, and it's everything: 3 and a half years of aging in stainless steel tanks. Not in wood, not in amphora, not in concrete: in steel, the most neutral container possible, where the wine is left alone with itself for all that time, without oxygen, without interference, slowly building a complexity that no accelerated technique could ever replicate.
The 2021 vintage is released with a basic maturity that almost no Italian white wine at this price can boast, and this is also why it belongs to the winery's Essenze line: a plot, a soil, a grape, a wine

Vinificazione |
Soft pressing of whole grapes in a pneumatic press. Fermentation in steel tanks with indigenous yeasts until sugars are exhausted. Aging for 3 and a half years in stainless steel tanks. Bottling during the waning moon. |
Profumo |
The nose is evolved and layered: ripe white-fleshed fruit, notes of almond, acacia honey, dried aromatic herbs, and a clear calcareous minerality that runs through the entire olfactory profile. |
Gusto |
In the mouth it is taut, savory and surprisingly fresh for a wine of this age: the acidity is lively, the body is substantial, and the finish is long and almondy. |
Abbinamento |
Pumpkin and amaretto risotto, butter and truffle pasta, lake fish stew, baked sea bass, semi-hard cheeses, foie gras. |
