Subsidium - Zero Dosage Cherubini Reserve
A cuvée made from Chardonnay and Pinot Noir in roughly equal parts. The harvest takes place between the end of August and the beginning of September. The Pinot Noir is pressed very lightly, while the Chardonnay undergoes classic soft pressing. The crus are vinified separately in concrete and blended after the spring rest, at the moment when the secondary fermentation begins. After a minimum of 60 months of aging, disgorgement follows, and the same wine is used for topping up.
