Prosecco Valdobbiadene DOCG 2024 Ca' dei Zago
The Prosecco Col Fondo from Ca' dei Zago is what Prosecco was before autoclaves: cloudy, lively, naturally sparkling. The Zago family has cultivated these steep hills of San Pietro di Barbozza since 1924, always biodynamically even before the word existed, with 50-60 year old vines worked by hand because the slopes do not allow machinery. Glera with small additions of Verdiso, Bianchetta, and Perera, short skin maceration, spontaneous fermentation, winter rest in steel, then bottled in spring without filtering anything: refermentation starts on its own, the yeasts remain at the bottom, the resulting Prosecco is citrusy, floral, mineral, with delicate bubbles and 11 degrees that aren't heavy. Made the way it used to be, because they used to make it better.

Maceration on the skins for 2 days with pump-overs and punch-downs. Spontaneous fermentation with indigenous yeasts. Rest in steel for the entire winter; all-natural clarification, tartaric and protein stabilization. Spontaneous refermentation in the bottle (ancestral method, with lees). No disgorgement, no filtration, no dosage. |
