Spontaneous fermentation with indigenous yeasts in concrete tanks and open wooden vats, without temperature control. Prolonged maceration of approximately 2 months to extract all the matter that biodynamic viticulture brings to the fruit. Gentle pressing. Aged for 18 months in 20-hectolitre Stockinger barrels. |
