Only durella in all its purity for Montemagro, after several experiments, Daniele has found the way to his most representative Bianco. Classic white vinification for this vintage, destemmed bunch pressing using only the free-run must with fermentation in large 30hl Slavonian wood and a 20 hl French oak round. Yeasts in suspension until the month before bottling (around September), then a sweet rest in the bottle for about a year and a half.

Late manual harvest, picked in the first ten days of October. Spontaneous fermentation with indigenous yeasts, 50% in stainless steel and 50% in large Slavonian and French oak barrels (20-30 hl). The duration of skin maceration varies according to the characteristics of the vintage. Aged for 10 months in the same containers, with yeasts in suspension until the month before bottling. Long rest in the bottle. |
