Levis - Rosè Zero Dosage Cherubini
Made from 100% Pinot Noir, the grapes are destemmed and left to macerate for about 6 hours. The wine is then transferred to concrete tanks for spontaneous fermentation, which lasts approximately twenty days. After fermentation, it is transferred back to concrete tanks where it rests until the secondary fermentation. After a minimum of 48 months of aging, disgorgement takes place, and the same wine is used for topping up.

Transfer to concrete where it rests until secondary fermentation. No fining or stabilization. Refermentation in the bottle according to the Traditional Method. Aging on lees for a minimum of 48 months. Disgorgement with topping up with the same wine. Zero dosage. Disgorged March 2024. |
