Grenache, Sirah and Mourvedre from vines aged between 15 and 40 years, at altitudes of around 250 metres. Manual harvest in crates from clay-limestone mosaic soils, while spontaneous fermentation with its own yeasts is done in 60 hl concrete vats with whole bunch maceration for 9/12 days without mechanical extraction, which respects the fruit, the wine and the energy of its yeasts. It rests 6 months in stainless steel before bottling. Expect a wonderful bouquet of lavender, thyme and grenadine that leads to a superfine, perfumed and sexy palate – somehow delicate, yet seductive, but pure, all at the same time.
