Domaine Huet's Vouvray Demi-Sec Le Clos du Bourg 2015 is one of France's great white wines, and that's no hyperbole. Founded in 1928 by Gaston Huet, who firmly believed that Clos du Bourg was the greatest vineyard in all of Vouvray, the domaine has been the absolute benchmark for Chenin Blanc in this appellation for almost a century, the standard against which all others are measured.
Clos du Bourg is a vineyard enclosed by ancient stone walls, located on the Première Côte just above the church of Vouvray, in a south-facing position that captures all available sunlight and protects the vines from winds. The soils are shallow, clay-limestone and stony, with the vine roots in direct contact with the underlying limestone layer: a scarcity of soil that forces the Chenin to work, to concentrate, to build the structure and minerality that allow these wines to age for decades. 2015 is a sunny and generous vintage throughout the Loire, which has given the Demi-Sec a balance between residual sweetness and acidity of rare perfection.

Slow spontaneous fermentation in 600-liter demi-muids and vats, without artificial temperature control, in the naturally cool cellars of the domaine. Malolactic fermentation is intentionally avoided to preserve the acidity of the Chenin Blanc. Aged in stainless steel after several rackings. Bottled in April following the harvest with a gentle filtration. |

The nose is exciting and complex: white flower honey, quince, ripe pear, yellow citrus, dried herbs, blonde tobacco, and a flint note. |

On the palate, it is round, velvety, and smooth, with about 20 g/l of residual sugar that is not perceived as sweetness but as volume and depth, thanks to the sharp acidity and calcareous minerality that run through the sip from start to finish. Very long finish. |

Magnificent with foie gras, crustaceans in sauce, buttered lobster, soft blue cheeses. Classic with oysters. Also try with Asian preparations based on delicate spices, such as a light chicken curry or Vietnamese dishes with fresh herbs. Excellent on its own, as a meditation wine. |
