Coming from very calcareous, pink and white soils. Partly clayey with the presence of outcropping rocks of various colors and nature. Hand-picked in small crates, direct pressing or destemming depending on the vintage. Decanting of the must and spontaneous fermentation with a previously prepared pied de cuve. Fermented mostly in steel and a small part in French oak. Aged for 8 months in steel on fine lees. The wine for every day, easy, carefree, to have for breakfast. The essence of the fruit.
