Jakot 50 cl Venezia Giulia White IGT 2020 Radikon
Jakot is "Tokaj" spelled backward — and the name is not a random play on words. When the European Union prohibited Italy from using the name Tocai for its native Friulian grape variety, Stanko Radikon responded by reversing the word and keeping it on the label anyway. It was a gesture of identity before it was a polemic. Friulano — as the grape is called today, and as everyone calls it except those with wine on their minds — grows on the same hills of Oslavia where Ribolla grows, on the same Ponka: the stratified clayey marl that deep down becomes as hard as rock and patiently releases minerals. But Friulano is a different grape: fleshier, more material, with a denser structure and an olfactory depth that, in Radikon's hands, becomes something difficult to compare to any other Italian white. Maceration for 3-4 months in truncated oak vats, four manual punch-downs per day to keep the skins submerged, then over three years in large barrels, then 18 months in the bottle. Approximately 7,000 bottles per vintage, no filtration, no sulfites, no fining. The wine is released six years after the harvest. Today the winery is run by Saša Radikon, who continues its philosophy without changing a comma.

Destemming and crushing, spontaneous fermentation with indigenous yeasts and 3-4 months' skin maceration in open truncated oak vats, without temperature control, with 3-4 manual punch-downs per day. The vats are filled and closed at the end of alcoholic fermentation, and the wine remains in contact with the skins for the entire duration of the maceration. Racking and aging in 25-35 hl oak barrels for 40-42 months, with frequent rackings if necessary. 18 months in bottle before release. |
Profumo |
The nose is intense and complex: almond, dried fruit, candied apricot, honey, glazed notes, vanilla, spices. With time in the glass, herbaceous notes, mushroom, and undergrowth emerge. |
Gusto |
On the palate, it is broad, full-bodied and deep: voluminous texture, fine but present tannins, acidity balanced by the structure, a finish of extraordinary persistence with notes of almond and stone. The pulpier and more "fleshy" of Radikon's white wines. |

Frittatas, stuffed pasta, mushroom and truffle dishes, structured white meats, fish soups, aged cheeses. Excellent on its own as a meditation wine. |
