Pinot Noir from vines of about 40 years with low yields and very high quality. The wine is obtained by vinifying the whole bunch without destemming, and fermenting it with indigenous yeasts. The wine is then aged in French oak barriques for 15 - 18 months, a time that varies based on the vintage and the wine's ability to preserve. On the nose notes of cherry and raspberry, hints of toasting, herbaceous and balsamic, a rich bouquet. On the palate good acidity, robust but noble body with delicate tannins. Deep and pleasant.

Vinificazione

Vendemmia manuale con selezione rigorosa. Fermentazione spontanea 100% a grappolo intero in tini di legno, ~3 settimane, senza lieviti selezionati. Macerazione prolungata senza estrazioni eccessive, follature solo in fase finale, movimenti per gravità. Affinamento 15-19 mesi in vecchie botti di rovere francese.
Profumo

Gusto

On the palate, good acidity, a robust yet noble body with delicate tannins. Deep and pleasing.
