Sparkling wine made using the classic method from pure Durella grapes, a grape variety on the verge of extinction that has existed around the Lessini Mountains for over a thousand years. The grapes are grown in particularly poor soils and with very low yields. Fermentation is spontaneous and carried out with indigenous yeasts in steel, followed by 6 months of aging in steel and 24 months in bottle on the lees. A classic method with excellent personality and pronounced savoriness that makes it a pleasant and balanced drink.

Vinificazione |
Gentle whole-cluster pressing, using only the free-run juice. Spontaneous fermentation with indigenous yeasts, 90% in steel and 10% in wood. Secondary fermentation occurs in spring with a pied de cuve made from dried Durella grapes: Piccinin concentrates the natural sugars of the grapes themselves instead of resorting to industrial syrups, a rare artisanal choice consistent with his entire philosophy. Aged on lees for 24 months. Disgorged February 2025, topped up with only base wine from the same vintage. Zero dosage. |

The nose offers ripe yellow fruit and bread crust, with a pleasant, refreshing mineral note. |

On the palate it is sharp and mineral, as the grape variety can be, yet with an exuberant body and a sapidity of a true champion. The finish has an astringent note and a very pleasant minerality. |

A distinctive aperitif, fried fish, raw seafood, saffron risotto, cod, fresh blue cheeses. Also excellent throughout a meal with dishes of medium structure. |
