Direct pressing, spontaneous fermentation in 425 L barrels and terracotta amphorae, and aging in the same containers for 11 months. Assembly of the base wines and bottling with the addition of sugars and "lees" from the base wines for the second fermentation. Disgorgement after 56 months. |
