Campai by Camillo Donati is a still white wine. Unpretentious, simple, and immediately drinkable, as is the tradition of the winery.
Campai is a blend of Tuscan Malvasia, Tuscan Trebbiano, and a small percentage of non-aromatic Malvasia di Candia, harvested and vinified together. The name comes from "Kampai," the Japanese toast, and is a heartfelt tribute to Hisato, Camillo's dear Japanese friend who always encouraged him to produce a still wine.
The result is a young, fresh, and vibrant white wine, with intense notes of green apple, citrus, and white flowers. On the palate, it is dry and fruity, with a lively acidity that gives it verve and refreshing lightness. Energetic and slightly aromatic, it maintains the explosive character typical of Donati wines, but this time without the pressure of bubbles. A wine that invites to toast, share, and enjoy the moment.

Direct crushing and destemming in the press, white vinification. Spontaneous fermentation with indigenous yeasts in open-top stainless steel tanks until completion. Racking, separating the heavy lees, aging in stainless steel until bottling in the spring. |
