Biso Rosé Sparkling Veneto IGT 2021 Tenuta la Cà
Biso means cloudy in the Garda dialect, and Tenuta La Cà proudly displays this on its label, without embarrassment. The cloudiness in the glass is not a flaw to hide: these are the live yeasts that have re-fermented the wine in the bottle and remained there, silent and precious, until the moment of opening. Pietro and Aldo Giambenini built Biso around a precise idea: to take Corvinone in its purest form, a native Veronese grape variety usually relegated to a supporting role in Bardolino, and make it the absolute protagonist of a sparkling rosé made with the ancestral method. The grapes are harvested in the second half of August, before the accumulation of sugars would have dulled their freshness, vinification with only the free-run must, re-fermentation in the bottle with disgorging during the waxing moon at the end of spring, yeasts that remain in suspension until the last drop. Zero sugars, zero filtration, zero added sulfites.

Vinificazione |
Undestemmed grapes loaded into a pneumatic press with a short maceration, pressing, and must fractionation; only free-run must is used. Fermentation in steel tanks with indigenous yeasts until the sugars are depleted. Resting on the lees for 8-9 months in steel. Bottling in late spring during the waxing moon, without added sugars or selected yeasts. Aging on the lees until the bottle is opened: no disgorgement, no dosage. |

The nose is floral and citrusy: strawberry, currant, dog rose, black cherry, pink grapefruit. |
Gusto |
In the mouth, it is fresh, pleasantly sparkling and mineral: fine and delicate bubbles, clear savouriness, raspberry and citrus that linger in the finish. |
