Bianchetta Metodo Classico Brut Nature 2019 Biondo Jeo
In the Monfumo hills, Cristian mainly cultivates Glera, but also Bianchetta Trevigiana, which thrives in these lands. This led Cristian, twenty years ago, to vinify it pure and sparkle it using the traditional method. Fermented in steel, it ages on lees for 36 months. The result is surprising, especially if tasted after a few years of bottle aging. The 2019, when tasted, reveals a golden color and very fine perlage. The nose is varied with citrus notes of ripe cedar, hints of white flowers, lily of the valley, and peppermint, wild thyme. On the palate, the bubbles are delicate but with an intense and juicy flavor. The acidity rests on a savory component that encourages drinking. An extremely versatile wine
