The “Podere Cervarola” farm was born from the desire to create an authentic project, fueled by years of studies and great passion for sustainable agriculture and natural oenology.
The company was founded in 2015 in Villabianca, on a ten-hectare farm called "Cervarola", about 300 m above sea level on the first hills of Modena. The land is partly planted with Lambrusco Grasparossa and in the following seasons the planting of local native varieties is planned to enhance the territory and recover past winemaking traditions.
The grapes are harvested manually and taken to the cellar where we try to create a natural winemaking process. In fact, the musts do not undergo any temperature control, clarification or filtration, or the addition of yeasts or enzymes. In spring, with a waning moon, the wine is then bottled where natural refermentation will take place.
These oenological choices are aimed at recovering ancient traditions and allow the different vines to express the different organoleptic characteristics and the territory.
