Sauvignon 2024 Ferlat
Ferlat's Sauvignon is born on the flat, gravelly terrain of the Isonzo, where this grape variety expresses its most direct and varietal version: no wood aging, no malolactic fermentation, just stainless steel, indigenous yeasts, and the time needed to build complexity on the fine lees. Moreno Ferlat and Federica Tabacchi treat it with the same rigor they reserve for the rest of their range: short cold maceration on the skins for 12-24 hours, spontaneous fermentation at 16°C to preserve the aromatic bouquet, aging until March. Malolactic fermentation is deliberately avoided so as not to soften the grape's natural acidity—that fresh, almost pungent tension that makes Isonzo Sauvignon recognizable and gastronomic. A vibrant white on the nose, precise on the palate, that needs no embellishment.

Destemming and crushing, cold maceration on the skins for 12-24 hours, soft pressing with minimal oxygen contact. Spontaneous fermentation with indigenous yeasts in stainless steel tanks at controlled temperature (16°C). Malolactic fermentation avoided. Ageing on fine lees in steel, with minimal rackings in total absence of oxygen, until just before bottling in March. |

A powerful aroma, reminiscent of yellow and white flowers, elderflower, mint, and exotic and non-exotic fruits (grapefruit, pineapple, passion fruit, white peach, apricot, and yellow plum). |

In the mouth it is immediate, fresh and long: almost pungent acidity, medium body, with a finish that stretches out with great aromatic length. |
