Sancerre Blanc Auksinis Maceration 2019 Sébastien Riffault

Sébastien Riffault's Sancerre Blanc Auksinis Maceration 2019 is the more extreme and physical version of Auksinis: same vineyard on siliceous soils, same late harvest with about 50% botrytized grapes, but with extended skin contact that radically changes the wine's profile. Where the basic Auksinis is opulent and soft, this is more robust, more fleshy, with defined tannins that give it grip and a mouthfeel that is closer to a structured red than a conventional white.

Paradoxically, it is the most approachable in youth among Riffault's cuvées: the maceration rounds the edges, adds body, and makes the fruit more immediate, while retaining all the complexity and siliceous minerality that is the hallmark of the domaine.

Vinificazione

spontaneous fermentation with 50% botrytized grapes and 7 days skin maceration in stainless steel tanks, followed by malolactic fermentation. 36 months aging on fine lees in old barriques.

Profumo

The nose is rich and layered: ripe tropical fruit, papaya, apple, floral and vegetal notes, animal hints of leather, and a pervasive minerality.

Gusto

On the palate, it is fleshy and structured, with prominent tannins, pronounced acidity, and a long finish of tobacco, rhubarb, and smoked stone.

Abbinamento

Ideal with fatty fish in elaborate preparations, buttered crustaceans, blue cheeses, quality charcuterie. It also pairs well with structured first courses like pasta with seafood ragout or a shellfish bisque.
